How do you make authentic mexican rice?

I love mexican food. I want to learn how to make it very good. Any good recepies on rice or anything else?

    Ingredients
    1 Cup White Rice
    2 Cups Water
    1 Small can of Tomato Sauce
    Salt to taste
    Pepper to taste
    2 Tbls Vegetable Oil
    Cilantro or Cheese for garnish

    Directions
    Warm your Skillet with oil on Med/High Heat
    Add Dry rice and "fry" your rice till it is toasty brown (do not burn it)
    Add Water
    Add Tomato Sauce
    Add Salt
    Add Pepper
    Cover for 15-20 mintues
    All water should be gone from bottom of pan, some Tomato sauce will remain on top
    Mix Rice and allow to steam with top on for 5 more minutes
    Serve Hot… Add garnish if desired on individual plates

  2. Its simple to make. The trick to Mexican rice is to use a long grain rice. It is also fried in oil prior to cooking.

    Here is how I make it:

    Fry a cup of rice in a pan with canola oil until it is golden brown. Do not burn it. Stir constantly during the cooking process.

    In a sauce pan, add the rice with 1 cup chicken stock, 1 cup plain tomato sauce, a little granulated garlic and white pepper. Add some sauted onions and garlic, too.

    Bring to a boil, lower to a simmer and put a lid on the pan and let it cook for about 20 min. Do not lift the lid and do not stir. Let it sit 5 min., fluff and serve.
