Beef Tinga.
You cook flank steak then shred it. Saute some sliced onions-about 2 onions. Roast tomatoes and chipotles-the ones in the can with sauce adobo are good. Optional is to add cooked chorizo-mexican chorizo. Once the onions are cooked, add the beef, the chorizo and the blended tomato and chipotle mixture. Add salt and pepper and its good to go. Its a great recipe. We usually eat it on a tostada, you could fill up quesadillas with it and many other ways.

guacamole, king ranch chicken
This is soooooooooooooooo good. Chicken enchillada’s:
bake four chicken breasts with bone in, seasoned with chili powder, garlic powder, salt and pepper and cayanne if you like it, until fully cooked.
meanwhile make the sauce:
four cans of cream of chicken soup
a pound of strong cheddar
one pint of sour cream
2 cans of jalepeno peppers,( not pickled if you can find them) one can if you aren’t used to hot food
Heat until cheese melts
When chicken is done, remove it from the bones and chop into large bite size peices
fill flour tortilla’s with chicken and sprinkle a few black olives (chopped) on the chicken and roll up
put some of the soup mixture in a baking dish and lay the enchillada’s in the baking dish
cover them with more soup mixture and a little more shredded cheese and bake at 350′ for about 30 minutes or until it is bubbling hot
serve them with more sauce on top
When I go home for a visit, my family and friends ask for this dish to be made and no one can eat just one.
I’ve yet to find a person that doesn’t like this dish.
If you have left over sauce, cook some broccolli and put it in the sauce to make a great soup the next day.
