go to mexico, eat a lot and then find recipes on the internet. i make my own versions of lots of mexican. heres a couple tradtional mexican dishes to get you started –

one of my favorites is my version of mexican tacos al pastor — if you never had them go to mexico and get some! Its pork (carnitas) and pineapple tacos with salsa taqueria –salsa taqueria is made from arbol chiles and tomatillos. i can get it in cans in florida at mexican markets. After you try it you will never want any other taco sauce again.
Try Mexico, I believe it is quite popular there.

I learned to cook Mexican food from the Diana Kennedy cookbooks. It’s authentic okay (I’ve spent lots of time traveling in Mexico).
Also an excellent, highly usable authentic Mexican cookbook: "Cocina de la Familia," Marilyn Tausend & Miguel Ravago.
Also good: Rick Bayless’s cookbooks.
