go to mexico, eat a lot and then find recipes on the internet. i make my own versions of lots of mexican. heres a couple tradtional mexican dishes to get you started --

pozole verde -- (from emeril -- lol)http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_30482,00.html?rsrc=search

mole poblano -- (from tyler florence -- another one!)
http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_30268,00.html?rsrc=search

one of my favorites is my version of mexican tacos al pastor -- if you never had them go to mexico and get some! Its pork (carnitas) and pineapple tacos with salsa taqueria --salsa taqueria is made from arbol chiles and tomatillos. i can get it in cans in florida at mexican markets. After you try it you will never want any other taco sauce again.

Best, highly authentic, classic Mexican cookbooks, well-written with lots of info on traditional techniques:

* The Cuisine of Mexico - Diana Kennedy
* Recipes from the Regional Cooks of Mexico - Diana Kennedy

I learned to cook Mexican food from the Diana Kennedy cookbooks. It's authentic okay (I've spent lots of time traveling in Mexico).

Also an excellent, highly usable authentic Mexican cookbook: "Cocina de la Familia," Marilyn Tausend & Miguel Ravago.

Also good: Rick Bayless's cookbooks.
